Ingredients

  • 4 frozen hash brown patties

Topping

  • 2 avocados

  • salt and freshly cracked ground black pepper to taste

  • 2 teaspoons freshly squeezed lemon juice, or to taste

  • 1 tablespoon butter

  • 4 large eggs

  • 1 cup arugula, or to taste

  • 2 teaspoons spicy honey, or to taste

Directions

  1. Preheat the air fryer to 400 degrees C (200 degrees C).

  2. Arrange 4 frozen hash brown potato patties in a single layer in the air fryer basket.

  3. Cook in the hot air fryer, turning once halfway through, until golden and crispy, 13 to 15 minutes.

  4. Melt 1 tablespoon butter in a large skillet over medium heat. Crack eggs into the skillet and cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.

  5. Mash avocados in a bowl with a fork and season with salt, pepper, and lemon juice. Spread mashed avocado onto the hot hash browns. Top each with a fried egg and some arugula. Drizzle with hot honey and season with freshly cracked black pepper.

Cook's Note:

If you don’t have an air fryer, cook in a 450 degrees F (230 degrees C) oven, turning once halfway through, 20 to 24 minutes.
